delicious oatmeal-chocolate-raisin cookies recipe

I say these are healthy, and with the relatively small amount of sugar versus the oats and bran, I stand by my claim. Using dark chocolate chips adds flavonoids and antioxidants. What's more, they're delicious.

1/2 c brown sugar, packed [I used dark]
1/4 c sugar [you could use turbinado, or probably honey if you swing that way]
1/2 c butter, at room temp [I assume you could sub a healthy margarine]
1 large egg
1 tsp pure vanilla extract
1 1/4 c rolled oats
1/2 c all-purpose flour [wheat or white will work]
1/4 c wheat bran [you can also use oat bran]
1 tsp ground cinnamon
1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/2 c raisins
1/4 c dark chocolate chips, the best you can afford

Preheat the oven to 350 degrees. You'll want to nonstick spray two baking sheets, or line them with parchment or a silpat.

Have two bowls ready. In one large bowl, cream the two sugars and butter together until really fluffy. Add your egg and the vanilla and mix it up!
Use the other bowl to combine the oats, oat bran, flour, cinnamon, baking powder and soda, and salt. Mix until well blended and then add to the bowl of butter and sugars; mix until just blended. Add in raisins and chocolate chips.

Use a 1/4 c measuring cup to make cookie mounds on the trays, and flatten them with the back of the cup just a little. You can get 5 - 6 cookies on each tray. You'll want to back them for about 15 minutes, turning them once, and then cool them on metal racks. be careful taking them off the trays! They'll want to crumble [but they'll still taste great!]

These are the best while still warm, but just as yummy later if stored in an air-tight container. One of these runs about 250 calories, so they're not totally guilt free, but with the oats and bran and raisins and just a touch of chocolate, they're quite healthy and totally worth it. You can add nuts or other dried fruit instead, they are very customizable!
